The best Quickbooks book I ever saw was one that was used to teach in a community college class I took. It took you step by step in learning how to do all the transactions, while giving you a little accounting theory too.
Unfortunately, the one I used is long out of print and outdated. I would drop by your local community college and go to their bookstore and see what book they use to teach that class. I'm sure they have one.
It may be a tad late, but the class was incredibly useful when I took it.
